Due to its moderate level of monounsaturates and polyunsaturates it is considered to be a better choice for overall wellness than oils predominantly composed of saturated fat. With moderate levels of monounsaturated fatty acids, peanut oil is also more resistant to rancidity compared to other popular frying oils.
